Yes you know the drill…days after Easter and still have all those boiled eggs taking up fridge space.
Even though they are so pretty to look at…we all have the need for more fridge real estate!
Well here’s a quick and delish idea I made up for lunch today:
Ham & Egg Salad Sandwiches
For about 4 sandwiches you’ll need:
3 boiled eggs
1 can smoked ham
1/2 cup mayo
S&P seasoned to taste (about 1/2 tsp of each)
Peel and chop the boiled eggs and mix all ingredients together. Spread on your favorite sandwich bread…yummo!
