Plateau

Today marks 10 weeks on Weight Watchers. Up until week 8 I was losing 1-3 pounds a week.

The last two weeks – NOTHING.

So yes, 18 lbs, and killing myself to get to that 20. To say I’m frustrated is an understatement.

I have doubled my workouts, eat the same if not less, and just can’t figure out what is going on. The only thing I noticed is I haven’t been eating breakfast. So I’m going to add that back in. (not out of hunger, just forgetfulness / lack of time)

Wish me luck…in this wasteland of a plateau!

Just a quick update on my journey down the scales…I’ve officially lost 18 lbs! 2 more till I will be dress shopping again.

Pepper Stuffed Pork Chops

Yes….I’m back again with another fun recipe my Fiance and I came up with this weekend. I’m so blessed that he’s so supportive and always loves to come up with fun new things in the kitchen. I can’t wait to become his wife in December!

Pepper Stuffed Pork Chops :: 4 WW + Points per Chop

Cook / Prep Time 45-50 min

Ingredients:

2 Medium Size (thick but fat trimmed) Pork Chops

An assortment of Bell Peppers…I used the snacker mini kind that you can find in a baggie locally at Publix

2 cloves of pressed garlic

Dash of Onion Powder

Dash of Lawry’s Seasoned Salt

Dash of Pepper

2 tsp of Olive Oil

I started by chopping up 3 of the small peppers (proved to be plenty of stuffing) and mixed them with 1 of the garlic cloves, set aside. Preheat oven to 375 F.

Slice each pork chop to make a little “pocket” for your stuffings. I browned the outsides of the pork chops first in a skillet with the olive oil & seasonings, and the extra clove of garlic. I think this makes the seasonings “stick” better. (About 45 seconds on each side of a hot pan)

Lay both chops on a cookie sheet (I line mine with Aluminum Foil for easy clean-up) and then stuff each with the peppers & garlic mixture. If you don’t want to stick, maybe add some olive oil spray…but mine were easy peasy!

Let cook about 35-45 minutes keeping an eye on the bad boys to make sure they look good. The fat juices of ours melted right out making this dish even healthier!

Veggie & Feta Quiche

This is my adaption of one of WW’s featured recipes this week. I just have to say that if you are looking for something easy that you can grab & go in the morning…making one dozen of these has one less thing for me to worry about this week. And they are delicious to boot!

Veggie & Feta Quiche :: 2 WW + Points / each

Cook / Prep Time: 30 Min

Ingredients:

6 eggs / 2 egg whites

1 cup diced spinach

1/2 cup diced tomotoes

1/2 cup diced yellow bell pepper (any sweet pepper would work)

1/2 cup fat free feta cheese

1/2 cup whipped cream cheese / or low fat cream cheese if you have it

Dash of onion powder

Dash of Lawry’s Seasoned Salt

Dash of pepper

Couple of sprays of Olive Oil cooking spray

Preheat Oven to 350 F

My second favorite kitchen tool (in a close tie to my garlic press) is my super fast hand chopper from Pampered Chef. If you don’t have one…I recommend getting one ASAP.

Ok so chop up all the veggies and place in a large bowl. In a separate smaller bowl whisk eggs / egg whites till frothy and add seasonings.

Add egg mix to veggies and mix with feta & cream cheese. Mix it all up till it’s nice and saturated and smooth. (like 2 min)

Spray a 12 cup muffin pan with the olive oil spray. Fill each muffin pan about 2/3 full and put in oven. Bake for about 15-20 minutes / keep an eye on when those edges start to brown. Once stiff, remove from oven and use a spatula to loosen each quiche and place on drying rack.

I of course ate one immediately for tasting purposes 🙂

But you can also freeze / refrigerate for the week in separate tupperwares for a quick grab on the way into the office. Whether that be your house…or a long drive to a cubicle (like me)

 

Turkey Avocado Wrap

So this may not qualify as a “recipe” but more of a quick and easy lunch idea.

All I know is…Avocado makes everything better…so try it out! And this wrap is SUPER filling. I promise you won’t be hungry for at least 1 1/2 – 2 hours…which is a rarity for me 🙂

Turkey Avocado Wrap :: 6 WW +Points

Cook / Prep Time: 10 min

Ingredients:

1 basil & tomato wrap

1/4 sliced fresh avocado

2 thin slices of turkey

1/4 cup fresh spinach

1/4 cup diced tomatoes

Dash of salt & pepper

Super simple, just place all the ingredients in the wrap…and fold away! I’m still perfecting the perfect “wrap” but I think I’m getting close.

Weight Watchers & A Wedding

Only 8 months till we tie the knot…and after quitting smoking [gaining 15 lbs] I drove my chubby ass booty up to a Weight Watchers meeting this week. In the past, I’ve lost 20 pounds on the plan and tried just about everything else under the sun. For you girls out there who “never have to diet or work out” you can stop reading now…and feel free to jump off a bridge…just kidding 🙂

But for the rest of us girls who are known as “thick” “pretty in the face” or just about any other back handed compliment for those of us who are a size 14 and above…I’m dedicating a new section of my blog to us!

In just 3 days I’ve had a BLAST coming up with healthy / low point / delicious meals…and decided I needed to share them with the rest of the world. Even if no one else reads this…it’s still fun for me share my love of cooking, and the fact that it can be healthy not taste like shit crap.

I’m super pumped to lose some weight [as if a wedding on the horizon wasn’t enough of a challenge] — Quitting Smoking was THE hardest thing I’ve ever done. And right now, following WW is looking like a breeze, and a new challenge…and most of all… A NEW GOAL.

To start out…I wanted to share what I made for dinner last night:

Spinach & Feta Wrap w/ Yogurt Dip :: 5pts for the whole thing!

Prep / Cook Time: 10 min

Ingredients:

3 cups Fresh Spinach

1/2 cup Fat Free Feta Cheese

1 Large Clove of Garlic Minced / Pressed

Dash of Onion Powder

1 tbsp Olive Oil

Basil & Tomato Wrap (or any other wrap that’s on sale and low fat)

Olive Oil Spray (I use Publix Brand)

Yogurt Dip Like This:

In a large skillet sauté the  olive oil, garlic, and onion powder till the garlic starts to soften at a medium heat. Add the spinach and stir until wilted (about 2 min). Remove spinach and place in bowl with feta cheese. Stir till fully mixed.

Back in your skillet add your wrap. Place on one side all of the spinach & goodies (like an omelet).

Press to make it nice and crispy, and if you’re feeling brave flip it!

Remove to a plate and add a tbsp of yogurt sauce to dip.

I’m telling you what…my fiance is one of the most “meat and potatoes” men I know…and he LOVED this dish. Try it out and let me know what you think!
